Chicken Cauliflower Bake

We have found this dish to be a great way of getting kids to eat their veggies (that’s vegetables not vegetarians). We usually use the leftovers from a roast chicken for this recipe. You can make your own creamy cauliflower if you like but its just as easy to use a shop brand, and cheaper.

The Ingredients:

Roast chicken leftovers
1 Packet of shop bought cheesy cauliflower
Half cup of frozen peas
Half cup of frozen green beans
Half cup of frozen carrots
Tinned Sweetcorn
Chorizo
Paprika
Salt
Black pepper
Grated white cheddar

The Make:

Take one bowl. Place chicken pieces in first then layer with frozen veg. Add diced chorizo. Now cover with the creamy cauliflower. Season with a pinch of salt, pepper and paprika. Sprinkle a generous handful of cheddar on top. Repeat in three more bowls. Usually serves four. Place in preheated oven at 170 Celsius for 30 mins.
Make sure dish is heated through. For the adults we serve ours with homemade hot sauce and some chilli flakes.
