This is our take on the famous Red Velvet cupcake. The first time I made these cakes the colour reminded me of a favourite pair of red X Worx corduroy jeans I had back in the Nineties. So give it a go and see do you get brought back to a time when all that mattered was dodgy clothes and Rave.
4oz caster sugar
5oz unsalted butter
6oz self-raising flour
2 large eggs
2 tablespoons of Green & Blacks drinking chocolate powder
4 tablespoons of water
2 teaspoons of red food colouring
300g icing sugar, sieved
50g unsalted butter, softened
120g cream cheese
1 tsp vanilla extract
Preheat the oven to 180 degrees. Line a 12 muffin cake tin with paper cases. Whisk the butter and sugar together in a bowl. Add the flour, eggs, chocolate powder, water, and red food colouring. Beat the mixture until all the ingredients are well combined. Divide the mixture between muffin cases. Place in the oven for approx. 20 minutes. Leave to cool on a wire tray.
Once cooled, mix the icing sugar, butter, cream cheese and vanilla extract until it forms small peaks. Decorate each cake with piped cream cheese icing.
