In our house “Ratatouille” is one our favourite food movies of all time. Our 4 year old daughter absolutely loves it, especially the scene where Remy starts to fix Linguini’s soup. She asked Dad if we could make it together someday. So with a little research on Mr Google, I found this recipe. We tweaked it a bit though. It’s a vegetarian friendly soup and does not contain Rat.
Ingredients :
Olive Oil
Butter
1 Shallot,finely chopped
2 Garlic cloves,finely chopped
250ml White Wine
1 tsp Chilli flakes
1 tin of Chopped Tomatoes
3 Potatoes,cubed
1 Leek
3 Scallions
1 tsp Thyme
1 tsp Basil
2 Bay leaves
Handful of chopped parsley
Vegetable stock cube
250ml Fresh cream
Salt
Ground black pepper
The Make:
In a large pot heat olive oil and butter. Add thyme,basil,chilli flakes,shallots and garlic. After a few moments add potatoes and let them brown a little. Now add chopped leek and scallion. When everything starts to soften add the white wine. Let it reduce by half. Now add tomatoes and stock cube. Bring to boil. Add cream and turn down to a simmer. Leave for around 20 mins. Blitz with a soup blender or similar. Serve up in deep bowl.
