Butternut squash, basil and roast potato soup

ImageLeftovers can really be handy for another meal.It just takes a little thought. After yesterdays roast chicken we had leftover roast potatoes and butternut squash. Too good to give to the dog, sorry Mani.Image

Take leftover squash, spuds and add some milk and salt. Blend until smooth. Pass through a sieve to remove basil pieces. Serving with a chive flower is optional .Enjoy.
