Ms. Linda’s Ya Ka Mein (cover version)

Ms Linda serves street food in New Orleans. I first saw her on Anthony Bourdains  Discovery Channels “No Reservations ” Cajun episode. My absolute all time favourite episode. Anyway, she sells this dish everyday from the back of her pick-up truck and it sells out fast. It has a few different names , one being ” Old Sober “. Just the salt and heat from this dish would sober up Shane McGowan. Probably not, but after a night on the batter or the morning after this is definitely a pot to shave the Hair of the Dog.

The Ingredients:

1 fillet steak
2 green peppers
1 bunch of spring onions
3 tsp Cajun spice
1 tsp black pepper
1 tsp garlic salt
HP sauce
Worcestershire sauce
1 beef stock cube 
1 chicken stock cube
Soy sauce
1 1/2 pint water
Oil
Egg noodles
Boiled egg ( half per serving)

The Make:

Slice and dice steak. Slice spring onion, save some for garnish. In a pot with a little oil brown off steak and onions. Add chopped green pepper. Add Cajun spice, black pepper and garlic salt. Stir. Add stock cubes, I prefer to melt the stock cubes in the hot pan first. Now add water. Stir in a tablespoon of each the HP, Soy and Worcestershire sauce. Bring to a simmer. Once the green pepper is tender it’s done. Boil noodles and egg. Serve up and enjoy.
