Springtime has definitely sprung. But we still feel like we are stuck in the depths of winter. With Jack Frost still nipping at your nose it time to reach for the casserole dish and cook up my delicious dish. This meal promises to give you a great big hug from the inside. You will certainly go back for more.
5 chicken thighs
100g chorizo sausage
500g organic baby potatoes
30g wild rocket leaves
2 cloves garlic
150g baby button mushrooms
3 miniature leeks
250ml double cream
400g cream of mushroom condensed soup
Zest half lemon
Tsp lemon juice
Cracked Salt & black pepper to season
Brown off chicken in casserole pot. Remove chicken and add chorizo. Brown off this too and remove. Set aside with chicken. Now add rocket,garlic,mushrooms and leeks. Soften veg. Add cream,soup and milk. Add in chopped potato. Bring to a simmer. Stir in lemon zest and juice. Replace chicken and chorizo. Cover pot and cook in oven for 40 mins at 160C. Serve up with some cracked salt and black pepper. Enjoy.
