Beetroot, pear and avocado salad with peanut butter walnuts.

This salad is a tasty little dish. The matching of avocado and peanut butter with the beetroot and pear really makes a refreshing plate. Our 4 year old loves it. Mixing sweet pear in the salad helps kids eat the greens and the little peanut butter clusters added a nice crunch to an otherwise delicate salad. You could use tahini paste if you like in place of the peanut butter. Beetroot is rich in antioxidants and is a popular superfood right now. This salad is just one way introducing this wonderful vegetable to your kids meals.

The Ingedients:

1 avocado
1 pickled beetroot
1 ripe pear
1/2 cup of walnuts
Iceberg lettuce
Lambs lettuce
Rocket leaves
Baby spinach leaves
Peanut butter
Honey
Dressing of choice

The Make:

Toast walnuts in a dry pan. As they start to brown add in a little honey to glaze. Now add in a tablespoon of peanut butter. Take of the heat and set aside. Slice beetroot, pear and avocado. Dress leaves and arrange on plate. Enjoy.
