With all the piggy talk these days I had to go and make a pork dish. This eastern inspired burger is so incredible it will have you salivating just reading the recipe. Forget all you know about BBQ’s and burgers because pork is the new beef at our house.
The Ingredients:
500g pork mince
100ml rice wine vinegar
1/2 cucumber
2 garlic cloves
2 inch knob of ginger
4 spring onions
Maldon sea salt
3 tbsp mayonnaise
2 tbsp Sriracha (chilli garlic sauce)
Hoisin sauce
4 sesame seed buns
150g unsalted butter
The Make:
Slice cucumber thinly using a mandolin. Soak cucumber in vinegar and a pinch of salt for 30 minutes. Blitz garlic cloves, ginger and spring onions. Mix the blitz evenly with pork mince. Press mince into burgers. Set aside. Mix mayonnaise with Sriracha. Grill burgers for approximately 30 minutes or until done. Melt butter in a pot. Brush melted butter onto sesame buns and grill until golden.
The Build:
Spread Sriracha mayonnaise on lower bun. Place burger on next. Top burger with cucumber. Spread hoisin on top bun and cap the burger.
