Ratatouille

There’s a rat in ma kitchen again. Ratatouille is by far the best foodie movie to watch with the kids. So much so that Abigail and I recreated the famous soup that Linguini accidentally made in the movie. This time around we have made the ratatouille dish that is served at the end of the movie. The tomatoes and courgettes are all from our poly tunnel. To make the sauce check out our spag bol for the recipe.

The Ingredients:

Selection of different coloured courgettes

10 medium tomatoes

Homemade tomato sauce

Olive oil

Salt and pepper for seasoning

Chives and parsley for garnish

The Make:

Grease a ceramic oven dish with the olive oil to prevent the ingredients from sticking. Using a mandolin or a very sharp knife to slice the courgettes and tomatoes wafer thin. Spoon enough of the tomato sauce into the dish to make a nice base. Now build up the dish by layering the veg around the dish in an overlapping fashion. Start with one of the sliced courgettes and next the tomato until you have used up all the veg. Add a little seasoning through out the layering. Cut out some greaseproof paper to cover the dish while cooking in the oven. This will help steam the veg and prevent it from burning. Cook the dish at 170C for around 35 mins. When the dish is done you should be able to pass a knife through it without resistance. Serve up a portion with a little herb garnish. This dish goes really well with a fried egg on top with a sprinkle of chilli flakes. Enjoy.
