Curried sweetcorn and mushroom soup

Brrr! There is a definite change in the temperature outside this week. Thank God its dry though. Even with the shorter days the kids can still get some playtime outside, it’s all about scooters these days. Halloween is around the corner and there have been some deep discussions about what to dress up as. Last year the popular fancy dress was a dead bride. This year I’m guessing zombies, well at least for me. This soup will make you feel nice and warm on the inside. The curry powder gives it just the right amount of heat to banish any haunting chills.

The Ingredients:

1 tin of sweetcorn

1 tin of mushroom soup

1 tsp curry powder

A pinch of garam marsala spice

A pinch of onion salt

A pinch of dried mixed herbs

Salt and pepper for seasoning

The Make:

Empty both tins into a blender. Add in the herbs, spices and half a tin of water. Blend until smooth. Pour into a pot and bring to a simmer. Adjust your seasoning now if needed. Pass the warm soup through a sieve into a clean pot to remove any sweetcorn skins. Reheat the smooth soup and prepare for a nice little cuddle. Enjoy.
