My Banana and Peanut Butter Loaf with Blueberry Buttercream is an absolute favourite in our house. My husband and children can’t get enough of it. It is my mix on the classic Peanut butter and jelly sandwich and Banana bread. With the addition of the crunchy peanut butter and blueberry buttercream it transforms into something truly special. The flavours work so well together. It is a real treat to be shared with family and friends. So if your tired of the January dieting give it a go and enjoy it because life’s too short.
Ingredients:
For the Loaf:
225g self raising flour
1 tsp baking powder
180g crunchy peanut butter
50g unsalted butter
225g soft light brown sugar
4 organic free range eggs
2 medium size bananas mashed
1 tsp vanilla extract
1 tbsp milk
For the Blueberry Buttercream
250g unsalted butter
500g icing sugar
2 -3 tbsp blueberry jam
1 tbsp milk
2 tsp vanilla extract
The Make:
Preheat oven to 160 degrees fan oven. Grease a large loaf tin and set aside.
To prepare the loaf, place the unsalted butter, peanut butter and brown sugar into a mixing bowl and mix until light and fluffy. Combine the eggs one at a time to the mixing bowl and mix well. Add the vanilla extract. Now add half of the flour, half of the mashed banana and then add the remaining half of the flour followed by the banana and a tablespoon of milk. Pour into a large greased loaf tin. Cook in the oven for approx 55 mins at 160 fan oven or until the skewer comes out clean. Remove from the oven and leave to cool on a wire rack.
To prepare the blueberry buttercream, put the butter into a mixer and whisk until smooth, slowly add the icing sugar until fully combined. Now add 2-3 generous tablespoons of blueberry jam followed by a tablespoon of milk and 2 teaspoons of vanilla extract. Now smear the top of the loaf with the blueberry buttercream.
