Chilli flakes can lift a plain dish to a lively dish instantly. And it’s not only savoury dishes either, you can add them to hot chocolate for that extra kick. Be sure to pass it through a sieve before drinking though. Chilli flakes are pretty simple to make. I left a plate of chillies sit on top of our gas boiler for a week until they dried out. It may take longer if you don’t put your heating regularly. You can speed up the process by drying them in the oven at a low heat making sure not to burn them. I chose the boiler as the heating was going to be put on anyway and you don’t have to keep an eye on them. Once the chillies are dried remove the stalks. Now place the chillies into a blender with a teaspoon of sea salt. When you are blending be sure not to over blend or you will be left with chilli dust.
